Banana banoffee dessert
Ingredients
1 cup milk
1 pkt sponge fingers
3 large bananas
1 condenced milk
5 cups milk
6 tblsps cornflour
6 tblsps sugar
2 eggs
1 sachet vanilla
200ml whipping cream
Chocolate shavings for decoration
Method
Place condenced milk as it is, in a pan and cover with water,place on heat and boil consistently for 2 hours,topping up with water when needed. Take out of water and leave to cool. Put the 5 cups of milk in saucepan and place on heat. In a bowl mix together the eggs sugar and cornflour, when milk comes to a boil , whisk in the egg mixture, keep whisking over heat until boils and thickens. Pour custard into a clean bowl, whisk in vanilla and cover with cling film . Leave to cool. In a pyrex dish place one layer of sponge fingers pour over the one cup of milk evenly. Open condenced milk, it will have thicken and become caramel, spoon over sponge fingers. Slice bananas and squeeze a little lemon juice over them, place on caramel evenly, spoon over bananas the custard and spread . Beat cream and spread over custard. Sprinkle chocolate shavings over cream, place in fridge for a few hours to cool.
