Macaroni in oven the village way

Ingredients

500g macaroni pastitio No 2
600g minced pork
1 tin tomatoes 250g
4 tblsps chopped parsley
3 tablsps dry mint
½ tsp cinommon
Salt pepper
175g butter
1 ltr milk
7 tblsps plain flour
1 halloumi grated
2 eggs 

Method

Place a large pan of water to boil add a little salt
In a frying pan put 50g of the butter to melt, add the minced pork, fry slightly.Add the parsley, mix. Add the mint , tomates, salt pepper and  cinommon, cook until all juices evaporate. If water has boiled add the macaroni, stir occassionly. In another pan melt the rest of the butter, whisk in the flour. Cook flour for a coiuple of minutes, stir in the milk slowly whisking all the time. Whisk until it thickens, break in the eggs and whisk well. Take off heat and stir in the halloumi, season with salt and pepper and a very small amount of cinommon. When macaroni is cooked drain . In a 28” tin place a little oil , pour ½ the macaroni and spread out, place all the minced pork on top and then the rest of macaroni. Pour over the white sauce and spread evenly, if u like sprinkle extra halloumi on top. Cook in a hot oven 200oc until golden brown.
