Almond Biscuits
Ingredients:
Biscuit
1 egg white
1/4 cup sugar
1 table spoon honey
80g ground almonds
1 tea spoon lemon Rind
1 table spoon S.R. flour
Topping
1/2 cup sugar
1 egg white
1/4 tea spoon vanilla
Description:
Biscuit
Beat egg white until soft peaks form, gradually add sugar and honey beat until sugar dissolves. Add the lemon rind, almonds and sifted flour, mix well. Then shape a table spoon of the mixture into lengths about 2 inches long. Put biscuits onto a greased tray and bake for 40-45 minutes in low oven.
Topping
Combine ingredients for topping by mixing together sugar, two table spoon of lightly beaten egg white and vanilla. Brush top of biscuits with the remaining egg white and then add a tea spoon of topping mixture on top of warm biscuit with a spoon. The topping will harden once cooled.
