Banana Ice Cream

Ingredients

1/2 pt milk
1/2 tsp vanilla essence
3 egg yolks
30 g caster sugar
3/4 pt double cream
3 large bananas
juice of 1 lemon

Method

Heat milk and vanilla essence until nearly boiled. Beat egg yolks and sugar until the mixture is thick and pale in color. Then gradually beat in the hot milk. Return the mixture to heat and heat it gently, stirring all the time until the mixture thickens. Pour in to a bowl and leave it until is cool. Whip cream until thick, then fold into the milk mixture. Mash the bananas and stir in the lemon juice and then add to the mixture and stir gently. Pour into a container, and freeze for 2 hours. Mix again and replace in container to freeze solid.
